you will need

  • 2 chicken breasts
  • 75g mushrooms, sliced
  • 50g radish, thinly sliced
  • 20ml sesame oil
  • 1 red bell pepper
  • 2 spring onions, thinly sliced
  • sesame seeds
  • 2 packs of itsu udon'noodles
  • 1 white onion
  • 100g itsu teriyaki sauce

let's get cooking

  1. step 1

    prep the vegetables by thinly slicing the onion, peppers, mushrooms, radish and spring onion

  2. step 2

    dice the chicken breast and pan fry in 10ml sesame oil on medium heat until golden and cooked through, set aside

  3. step 3

    cook the udon as instructed on pack, rinse in cold water and set aside

  4. step 4

    in a large frying pan or wok, stir fry the onion and mushrooms in 10ml of sesame oil until soft and clear

  5. step 5

    add in the red pepper and cook for a further 3 minutes

  6. step 6

    add the udon noodles, cooked chicken and teriyaki sauce. stir fry for 3 minutes making sure everything is evenly coated

  7. step 7

    serve out the chicken teriyaki noodles into two bowls and top with radish, sesame seeds and spring onion
