thai mango salad with gyoza

gyoza | serves 2 | prep time 15 | cook time

ingredients

  • 6 itsu gyoza (flavour of your choice!)
  • 1 mango thinly sliced
  • 2 sweet peppers
  • 1 carrot thinly sliced
  • 1/2 onions thinly sliced
  • 1/4 cucumber chopped into matchsticks or shaved
  • 1/2 handful handful peanuts (optional)
  • 1/2 handful handful coriander chopped
  • 1/2 small iceberg lettuce chopped into strips
  • 2 limes (zest of 1, juice of 2)
  • 1 fish sauce
  • 1 tsp sugar
  • 1 tsp pepper
  • 2 finely chopped shallots
  • 2 tbsp peanut oil (optional)
  • step 1

    Combine the salad ingredients in a bowl and set aside.

    Combine the dressing ingredients together

  • step 3

    Pan fry the gyoza as per instructions on the packaging

  • step 4

    Drizzle the dressing over the salad and gyoza

  • step 5

    Sprinkle with peanuts and coriander (optional)
