quick chicken & sweetcorn pho

brilliant-broth | serves 2 | prep time 5 mins | cook time 15 mins


  • 1 carton itsu chicken ramen brilliant'broth
  • 160g dry rice nooldes
  • 120g cooked chicken breast, roughly shredded
  • 150g tinned sweetcorn
  • 2 spring onions finely chopped
  • 2 pinches coriander
  • step 1

    Pour boiling water over the rice noodles, leave to stand for 10-15 mins [or until cooked to your liking], and then drain.

  • step 2

    Heat the brilliant’broth in a small saucepan until piping hot.

  • step 3

    Add the shredded chicken & sweetcorn before taking it off the heat.

  • step 4

    Ladle the broth, chicken and sweetcorn over the noodles and top with a sprinkle of spring onions.

  • step 5

    Finish with a pinch of coriander and a lime wedge.
