mushroom noodle soup

brilliant-broth | serves 2 | prep time 5 | cook time 10

ingredients

  • 1 pack itsu miso mushroom brilliant'broth
  • 100g buckwheat noodles
  • 200g mixed mushrooms
  • 1 tsp black sesame seeds
  • 1 tbsp chopped chives
  • step 1

    Cook the noodles as per the packet instructions, drain and divide between two serving bowls.

  • step 2

    Meanwhile pan fry the mushrooms in a little oil until soft [approx. 5 mins], then place on top of the noodles.

  • step 3

    Warm the broth in a small saucepan for 5 mins or until piping hot.

  • step 4

    Ladle the broth over the mushrooms & noodles, top with a sprinkle of sesame seeds & chives. Serve & enjoy!
