miso maple glazed root vegetables

miso-easy | serves 2 | prep time 10 minutes | cook time 25 minutes

ingredients

  • 2 parsnips
  • 2 beetroot
  • half butternut squash
  • 2 sweet potatoes
  • 2 tbsp itsu miso
  • 2 tbsp maple syrup
  • 2 tbsp mirin
  • 1 tbsp soy sauce or tamari
  • step 1

    To make the glaze add the soy sauce, mirin, maple syrup, itsu miso & coconut oil into a bowl and mix. Set aside.

    Chop up the parsnips, beetroot, butternut squash & sweet potatoes (and/or any other root vegetables you fancy). Put them in a baking tray & drizzle over the glaze.

    Bake at 180C until they are baked through on the inside and crispy on the outside. Depending on your oven this should be between 25-45 minutes.

  • step 4

    Enjoy as a side dish or as part of a main meal.
