lime & coriander cauliflower rice with gyoza

gyoza | serves 2 | prep time 10 | cook time 10

ingredients

  • 1 cauliflower
  • 1 handful finely chopped coriander
  • 2 tbsp juice of lime
  • 1 handful finely chopped mint
  • 2 tsp chilli powder
  • 4 quartered vine tomatoes
  • 1 handful mange tout
  • 10 gyoza
  • 50 grams peas
  • 1 tbsp sesame oil
  • 2 sachets dipping sauce
  • step 1

    Blitz cauliflower in food processor until it is in very small 'rice like' pieces.

    Add finely chopped coriander, lime juice, chopped mint and chilli powder and blitz again so that the flavours have covered the rice.

  • step 3

    Boil or steam mange tout and peas

  • step 4

    Pan fry gyoza as per instructions on the pack

  • step 5

    Roast tomatoes under the grill until they have slightly browned

  • step 6

    Place the mange tout, peas, gyoza and roast tomatoes on the bed of cauliflower rice and drizzle with the sesame oil and dipping sauce provided
