chicken & wild rice bowl

brilliant-broth | serves 2 | prep time 3 mins | cook time 14 mins

ingredients

  • 1 carton itsu chicken ramen brilliant'broth
  • 2 chicken breasts
  • 250g pouch cooked wild rice 9 [we used basmati and wild rice]
  • 1 packet tender stem broccoli
  • 2 handfuls sugar snap peas
  • 1 red chilli
  • step 1

    Pan fry the chicken breasts with some olive oil, salt & pepper [about 10 mins each side].

    Heat the rice as per pack instructions.

  • step 3

    Chop the hard ends off the broccoli and steam with the sugar snap peas for about 4 mins.

  • step 4

    Add the chicken ramen brilliant’broth to a small saucepan and heat to a simmer.

  • step 5

    Add the cooked rice to two bowls and pour over the simmering broth.

  • step 6

    Top with sliced chicken breast and the steamed veg.

  • step 7

    Finish with some finely chopped chilli.
