baked miso aubergine

ingredients

  • 1 sachet of itsu miso'easy
  • 2 medium aubergines
  • 1 tbsp olive oil
  • 1 tsp sweetener [or sugar if you like]
  • 1 tsp sesame seeds
  • 1 handful fresh parsely
  • step 1

    Preheat oven to 180 degrees.

    Mix the miso'easy, olive oil & sweetener in a bowl.

  • step 3

    Slice the aubergines in half then carefully slice the flesh diagonally [without piercing the skin] each way creating a diamond pattern.

  • step 4

    Spread the miso'easy marinade over the open sides of the aubergine's then sprinkle them with sesame seeds.

  • step 5

    Place them 'open side up' on a tray and bake for 1 hour at 180 degrees.

  • step 6

    Serve with sprinkle of fresh parsley.
