bacon & macaroni brunch bowl
brilliant-broth | serves 2 | prep time 2 mins | cook time 10 mins
- 1 carton chicken ramen brilliant'broth
- 4 rashers smoked streaky bacon
- 75g macaroni pasta
- 2 handfuls baby spinach
- 2 free ranged eggs
- a drizzle of teriyaki sauce
Grill/fry the bacon until crispy and golden.
Poach the eggs in a pan of simmering water with a few dashes of white vinegar [stir the water to create a gentle swirl. Slowly break the eggs into the center and cook for 3-4 minutes or until the white is set].
Cook the macaroni as per the packet instructions and divide between the two bowls.
Warm the broth in a small saucepan until piping hot.
Pour the broth over the macaroni, and top with the crispy bacon, poached eggs, spinach, and a drizzle of teriyaki sauce. If you fancy an extra kick add a pinch of chilli flakes.
