bacon & brussel noodles

noodles | serves 1 | prep time 5 mins | cook time 10 mins

ingredients

  • 1 cup itsu chilli miso rice'noodles
  • 1 cup brussel sprouts
  • 4 rashers streaky smoked bacon
  • 1 handful coriander
  • 1 spring onion
  • 1 egg
  • step 1

    Finley chop the brussels spouts, bacon, spring onion and coriander.

  • step 2

    Fry the bacon until crispy, then place on some kitchen roll.

  • step 3

    Leaving the oil in the pan, fry the brussels sprouts [add some chilli if you like].

  • step 4

    Once ready put the bacon back in the pan.

  • step 5

    Add the noodles & broth sachet to a bowl and pour over 200ml of boiling water. Let it sit for 2 mins.

  • step 6

    Place the cooked noodles in a bowl and top with the bacon and Brussels sprouts.

  • step 7

    Fry an egg and place on top.

  • step 8

    Garnish with spring onion and coriander
