quick chicken & sweetcorn pho

you will need

  • 1 carton itsu sesame chicken broth for noodles
  • itsu rice noodles
  • 240g cooked chicken breast, roughly shredded
  • 300g tinned sweetcorn
  • 4 spring onions finely chopped
  • 4 pinches coriander

let's get cooking

  1. step 1

    Pour boiling water over the rice noodles, leave to stand for 10-15 mins [or until cooked to your liking], and then drain.

  2. step 2

    Heat the sesame chicken broth for noodles in a small saucepan until piping hot.

  3. step 3

    Add the shredded chicken & sweetcorn before taking it off the heat.

  4. step 4

    Ladle the broth, chicken and sweetcorn over the noodles and top with a sprinkle of spring onions.

  5. step 5

    Finish with a pinch of coriander and a lime wedge.
