courgetti gyoza salad

you will need

  • 6 vegetable fusion gyoza
  • 2 small courgettes or 1 large
  • 1 tbsp rice wine vingear
  • 1 tbsp sesame seeds
  • 1 tbsp sesame oil
  • 1 small red chilli or tsp of chilli flakes
  • 1 small handful coriander chopped
  • 2 tbsp soy sauce
  • 1/3 cucumber
  • 1 stalk spring onions
  • 1 tsp coconut oil
  • 1 tsp sugar (optional)
  • 1/2 lemon (juice)
  • 100ml water

  1. step 1

    Spiralise, peel or thinly slice courgettes and cucumber. Set aside in a bowl.

  2. step 2

    Combine rice wine vinegar, sesame oil, soy sauce, lemon juice, water and sugar (optional). Set aside.

  3. step 3

    Pan fry, steam or microwave the gyoza as per instruction on pack.

  4. step 4

    Add the coconut oil to a pan and toast sesame seeds on a low heat

  5. step 5

    Chop spring onion & finely chop the red chilli

  6. step 6

    Pour half of the dressing over the courgetti and cucumber. Place the gyoza on top and drizzle the rest on top.

  7. step 7

    Sprinkle toasted sesame seeds, spring onion. coriander and fresh chilli or chilli flakes on top
