you will need
- 1 sachet of itsu miso'easy
- 2 medium aubergines
- 1 tbsp olive oil
- 1 tsp sweetener [or sugar if you like]
- 1 tsp sesame seeds
- 1 handful fresh parsely
let's get cooking
Preheat oven to 180 degrees.
Mix the miso'easy, olive oil & sweetener in a bowl.
Slice the aubergines in half then carefully slice the flesh diagonally [without piercing the skin] each way creating a diamond pattern.
Spread the miso'easy marinade over the open sides of the aubergines then sprinkle them with sesame seeds.
Place them 'open side up' on a tray and bake for 1 hour at 180 degrees.
Serve with a sprinkle of fresh parsley.
