paradise rice

A simple and tasty fried rice inspired by itsu’s little rice bowls, – make it yours by adding whatever veg you have in the fridge.

what you’ll need for 2-3 people:

  • 250g cooked rice [top tip leave your rice to cool, it will fry better!]
  • 2 eggs
  • 1/2 red pepper [chopped]
  • 1 carrot [grated or chopped]
  • 1 courgette [chopped]
  • 2 tablespoon of soy sauce [about 30ml]
  • 1 tablespoon of oil [about 15ml]
  • 1 teaspoon of sesame oil [optional, for extra flavour]
  • A pinch of salt and pepper 

instructions:

  1. Cook rice, following the steps on the back of packet and set it aside.
  2. Heat 1 tablespoon of oil in a pan over medium heat and add the red pepper, beans, carrot, and courgette. Cook the veggies for 4-5 minutes, stirring, until the soft but still a little crunchy. Set them aside.
  3. In the same pan, crack in 2 eggs and mix them in a small circle for about 2 minutes until cooked. Push the eggs to one side of the pan.
  4. Add the rice to the pan. Stir for 2-3 minutes to heat up. Then mix in the cooked egg mixture.
  5. Add the veggies to the egg rice mixture, pour over the soy sauce and sesame oil [if using]. Stir everything together and season with salt and pepper to taste.
  6. Give it one last stir, then serve your paradise rice & enjoy
