Sushi, & rice pots, gyoza, bao’ buns, soups, salads, and sweet treats are freshly made on the spot every day in our kitchen by our trained professionals.

We are proud of our ingredients. They are responsibly fished and farmed and we do not contribute to overfishing and species endangerment. Our salmon comes from Norwegian fjords and Scottish waters, where topography, water flow, oxygen levels, and temperature breed superior-grade fish in natural environments. Premium fillets are delivered every day to our sushi restaurant in Hoxton. Our master artisans have the trained skill to trim and slice fish to an exact 9 grams of sushi and 15 grams of sashimi.
When it comes to our chicken, we identify suppliers with ethical farming practices guided by the Better Chicken Commitment. Our seasonal veggies are steamed and never fried. itsu Hoxton’s soy sauce is brewed to a 200year old traditional recipe, and the authentic miso paste is made with herbs and spices in the Nagano Valley.
