Vietnamese-style noodle rolls

you will need

  • 1 itsu chilli miso noodles & broth pot
  • handful of ice
  • 4 circular rice papers [use extra if needed]
  • 1 large carrot [sliced into batons]
  • 1 cucumber [sliced into batons]
  • 1 gem lettuce [roughly chopped]
  • 2 chilli peppers [thinly sliced]
  • 6 king prawns [cooked, peeled & sliced in half]
  • 1 tsp rice vinegar
  • handful of peanuts [crushed]

let's get cooking

  1. step 1

Open the itsu chilli miso noodles & broth pot, remove the broth sachet and set aside. Cook the noodles in a pan of boiling water for 3 to 5 minutes [until soft]. Drain the noodles, then plunge them into a bowl of ice water for 1 minute and drain again.

  2. step 2

Soak your first piece of rice paper in water for a couple of seconds, until soft and pliable, then lay it flat on the counter. Layer the carrot, cucumber, lettuce and chilli peppers onto the centre left side of the paper and nestle a small portion of noodles next to them, closer to the centre.

  3. step 3

Fold the top and bottom outer edges over towards the middle. While pinching the filling in place, begin to tightly roll it up into a log shape. Before you reach the end, place 3 king prawn halves in a row and fold those in as you complete the roll.

  4. step 4

Repeat this three more times, until you have 4 noodle rolls. You can always add a second rice paper to secure at the end, if necessary.

  5. step 5

Empty the broth paste into a dipping pot, add 1 tsp rice vinegar and top up with boiling water a little bit at a time, mixing until you have a creamy consistency. Garnish the dip with crushed peanuts, then serve alongside the noodle rolls.

Fresh, crunchy and ready in minutes, these Vietnamese-style noodle rolls are a fun twist on your usual noodle pot.
