you will need

  • 200g chicken mince
  • 1 small egg
  • 2 spring onions, finely chopped
  • 1 thumb of ginger, grated
  • 1 garlic clove, grated
  • ½ cup panko breadcrumbs
  • 1 tbsp cornflour
  • 1 tbsp soy sauce
  • pinch of black pepper
  • mixed leftover veg [we used pak choi, carrot & mushrooms]
  • 1 itsu chicken ramen brilliant’broth
  • rice or noodles, to serve [optional]

let's get cooking

  1. step 1

Chop your leftover veg into bite-sized pieces so everything cooks evenly. Add to a large pot, pour over the itsu chicken ramen brilliant’broth and simmer over a medium heat for 10 minutes.

  2. step 2

Meanwhile, add the chicken mince, egg, spring onions, ginger, garlic, panko breadcrumbs, cornflour, soy sauce and black pepper to a bowl. Mix until fully combined.

  3. step 3

Roll the mixture into small meatballs. For an easier, mess-free method, squeeze the mixture straight from the corner of a food bag.

  4. step 4

Make some space in the pot and carefully add the meatballs. Simmer for a further 10 minutes, or until the meatballs are cooked through.

  5. step 5

Scatter over fresh chives and enjoy as is or spoon over rice or noodles and serve.

High in protein, packed with vegetables and ready in just 30 minutes, this one-pot meal is perfect for a healthy midweek lunch or dinner. Just combine the chicken mince mix with fresh vegetables and itsu chicken ramen brilliant’broth atop noodles or rice to serve.
