rainbow ramen

This recipe uses all the vegetables you prepared in class today. Enjoy making this delicious and healthy Superpower Soba Noodle recipe!

what you’ll need:

  • carrot
  • grated courgette
  • spiralised large handful of edamame beans red pepper
  • sliced 4x noodles [make sure you remove the paper ties]
  • 4 x broth sachet
  • a handful of spring onion
  • a handful of coriander
  • seaweed thins
  • 4 eggs [optional]

instructions:

  1. Bring a pan of water to the boil.
  2. Prep your vegetables: peel and grate your carrot, spiralise your courgette, bridge cut your pepper, claw cut the spring onion, pop edamame beans and pick your coriander leaves.
  3. Whilst your water is warming up remove the spring onions & coriander from the veg box you prepared earlier in school.
  4. When your water* is boiling add your noodles and set a timer for 5 minutes.
  5. Whilst your noodles are cooking empty the broth sachets into a jug and pour 900ml of boiling water into the same a jug. Make sure to give it a good mix and be sure not to spill any hot water! 6. Whilst waiting for everything to heat/cook, get creative with your seaweed thins, cut into small shapes.
  6. When the timer beeps drain away the water into a colander sieve. Split your noodles between 4 bowls.
  7. Divide the different veg from your veg box [and optional eggs] and jug of broth between the 4 bowls.
  8. Garnish with the coriander leaves & spring onion you set aside earlier. Finally, sprinkle your seaweed shapes

*adding eggs? Lower the eggs into the boiling water alongside your noodles and set a timer again for 5 minutes. Drain your eggs with your noodles, carefully peel and slice your eggs in half using the bridge cutting technique. Set aside.
