rainbow egg muffins

Rainbow egg muffins are an energy filled, easy, tasty, and healthy option for breakfast, snacks, or lunch. Packed with veggies and topped with cheese, they’re simple to make and fun to eat! 

what you’ll need for 2-3 people:

  • 1 can of white beans [drained]
  • 4 large eggs
  • 1/2 red pepper [chopped into small pieces]
  • 1/2 an onion [optional but adds flavour]
  • 4 large handfuls of spinach
  • 50g grated cheese
  • 1 tablespoon of oil [for greasing the muffin tin]
  • A pinch of salt and pepper

instructions:

  1. Preheat your oven to 180°C. Grease a muffin tin with some oil or use muffin liners to prevent sticking.
  2. Chop the red pepper and onion (if using) into small pieces.
  3. Crack the 4 eggs into a bowl and whisk them together with a pinch of salt and pepper until smooth.
  4. Add your spinach, cooked red peppers and onion to the egg mixture.
  5. Spoon the egg and veggie mixture into the muffin tin, filling each cup about 2/3 full. You should get about 6 muffins.
  6. Evenly sprinkle cheese on top of the egg mixture.
  7. Place the muffin tin in the oven and bake for 15-20 minutes, or until the muffins are set, slightly golden on top, and firm to the touch. If you want a golden top, you can leave them in for a little longer.
  8. Let cool & enjoy!
