Dr Emma says

"This dish is a source of protein from the salmon, peas and beans, and the salmon in this dish is poached, a cooking method that doesn’t require added oil. Alongside the salmon, this salad contains a wide variety of plant foods including spinach, avocado, peas, beans, leeks, chives, coriander and mint, contributing different vitamins, minerals and plant compounds to the diet. Spinach, peas and beans also contribute to our intake of folate, a B-vitamin involved in making DNA and new cells."
