you will need
- 1 sachet itsu miso'easy traditional
- 125g farfalle pasta
- 1 clove garlic
- 1 cup sliced carrots
- 1 handful cashew nuts
- 1 pinch of chives
let's get cooking
Cook the pasta as per packet instructions.
Heat olive oil in a pan and fry garlic for 1 to 2 mins.
Then add the sliced carrots (steamed for 10 mins in the microwave) and some cashew nuts (soaked in hot water for 10 mins). Also add in some warm water at this stage and give it a stir.
Add the miso and mix well.
Let it slightly cool and then blend the mix.
Add the drained pasta to a pot and stir in the carrot miso sauce. Toss well and serve with some fresh chives.
