Vibrant noodle salad with rice noodles, red cabbage, bell peppers, edamame, and peanuts.

fresh Thai-style noodle salad

you will need

  • itsu spicy chick’n noodles & broth pot
  • handful of edamame beans
  • handful of shredded red cabbage
  • 1 carrot thinly sliced
  • 1 red bell pepper sliced
  • handful of crushed peanuts [to garnish]
  • half a lime [to serve]
  • dressing
  • half a lime
  • 2 tbsps of rice wine vinegar
  • 1 tsp crunchy peanut butter
  • 1 tsp ginger puree

let's get cooking

  1. step 1

    Open the lid of the itsu spicy chick’n noodles & broth pot, remove the sachets and put the rice noodles in a bowl of boiled water for 5 minutes. Empty the broth paste and oil into a separate bowl.

  2. step 2

    While the noodles soak, pour 100ml of boiling water into the broth paste and oil. Then add the peanut butter, ginger puree, rice wine vinegar and the juice of half a lime to the broth, stir well. [If the sauce dressing is too thick, thin out with a little more water.]

  3. step 3

    Once the noodles are cooked, refresh them in cold water and drain. Layer your vegetables on top of the noodles in a large bowl, then pour the sauce dressing over the top.

    Toss all of the ingredients together so the noodles and vegetables are evenly coated.

    Serve the noodle salad in a shallow dish with the other half of the lime and a garnish of crushed peanuts. Grab your chopsticks and enjoy.
