In a large pan or wok over a medium heat, dissolve the tom yum paste in 50ml of water and add the coconut milk, fish sauce, sugar and ripped kaffir lime leaves and let simmer for 10 minutes without the lid.
After 10 minutes, add in your itsu Thai-style prawn soup’dumplings and simmer for another 10 minutes with the lid partially on top.
Check for taste and add more fish sauce, sugar or lime juice as needed.
Turn off the heat and let cool slightly before topping with coriander leaves, itsu crispy’chilli oil and an extra squeeze of lime juice to serve.
