you will need

  • 7 dumpling wrappers, defrosted
  • handful of shredded vegetables [carrot, cucumber and red cabbage work well]
  • fresh coriander or spring onion, finely chopped
  • 1 dipping pot of itsu crispy'chilli oil
  • extra itsu teriyaki cooking'sauce, for drizzling
  • filling mix
  • 200g minced beef
  • 4 spring onions, finely chopped
  • 45g cabbage or pak choi, finely chopped and lightly salted
  • thumb-sized piece of ginger, grated
  • 2 cloves garlic, grated
  • 1 tbsp soy sauce
  • 1 tbsp mirin or shaoxing rice wine [optional]
  • 1 tbsp itsu teriyaki cooking'sauce
  • 1 tsp sesame oil
  • pinch of black pepper

let's get cooking

  1. step 1

    Place all the filling ingredients in a bowl and mix until combined.

  2. step 2

    Place 1½ tbsp of the filling onto each dumpling wrapper and spread it evenly across the surface, right to the edges.

  3. step 3

    Heat a large non-stick frying pan over medium-high heat. Place the dumplings filling-side down in the pan and cook for 5–7 minutes until golden, crisp and cooked through. Press down gently with a spatula as they cook. Flip and cook for a further 2 minutes until the wrappers are lightly golden.

  4. step 4

    Finish with the shredded vegetables and a sprinkle of coriander or spring onion. Add a drizzle of itsu teriyaki cooking'sauce and serve with itsu crispy'chilli oil on the side.
