Dr Emma says

"Tofu is a great source of fibre and plant protein and contains a phytonutrient [isoflavone] which studies have found have anti-inflammatory and antioxidant properties. This salad is covered in mineral-rich seeds - magnesium found in pumpkin seeds is important for muscle and nerve function, and vitamin E in sunflower seeds is important for skin health. Avocados are packed with antioxidants vitamin E and lutein, which may be associated with improved skin and eye health."
