Our salmon is delivered to us fresh (never frozen) by our good friends at Leroy. Leroy carry the strongest name in the business when it comes to sourcing great salmon. Farmed on the coastal fresh Atlantic waters of Norway, Leroy are committed to driving sustainability of the industry with cutting edge practices. They have a zero tolerance for discarding fish and they have a strong involvement in a voluntary environmental project to clean up marine waste from the sea.
Korea and South East Asia
Ceser, Marine Biologist
Ceser is responsible for personally checking the quality and Sustainability of the tuna that we source. Cesar has been working with us for over 5 years and is based in the UK but spends a lot of time in Korea and South East Asia souring the best possible Tuna for our beautiful products. Cesar has a vast amount of knowledge and is always on hand for any Tuna based questions we may have! Hea��s also worked for many years catching Tuna and has even helped and advised us with our fish cutters in store so he has a full understanding of our whole supply chain.
Shirataki noodlesSouth East Asia
Our zero or shirataki noodles contain zero carbs, almost zero calories and are gluten free. Theya��re made from the konjac plant and have been enjoyed for hundreds of years across South East Asia. Wea��ve included them in four salads, all high in protein and with our fresh signature dressings and crunchy vegetables steamed in-house.

Eduardo, Managing Director
We source our rice from our friends Curtiriso in Italy, the number one rice producing country in Europe. Eduardo and his team have been working with us for over a decade and our partnership is a great one. Eduardoa��s factory operates a completely closed loop supply chain, this means they only mill our rice from farms surrounding the mill so we know exactly what we are getting and from where. The waste that factory produces is burnt to create power to supply the mills and the extra goes straight to the Italian grid

Gilfresh is a family run company based in Loughgall in Northern Ireland, established by the Gilpin Family over 50 years ago. In the beginning it was very much a a�?family affaira�� with the Gilpin family growing cabbages and scallions for the Belfast market.
Today the family run business grows and processes our root veg. Wea��ve been working with Thomas for over 5 years and we are proud to support their farm and the family values they instil in their operation. Thomas and his family run a sustainable operation, with all waste being used as either animal feed or fuel for their generators powering the factory.

Toshio, Managing Director
Toshio and his family have been brewing soy since 1873. Our soy sauce comes directly from Japan to the factory in South Wales to give a truly authentic Japanese dining Experience. Our Soy Sauce is brewed to a traditional recipe and method that has changed very little in over 2000 years. Toshio has a great team around him and they also produce some of our other Asian inspired sauces. Onko-chishin is a Japanese proverb meaning a�?to move ahead by learning from the pasta�?. For Toshio, it means keeping tradition alive whilst embracing new ideas.

Our founder, Julian, made it his personal mission to find the most authentic gochujang sauce in Korea. So naturally we partnered with one of the most respected manufactures of sauces in South Korea a�� CJ CheilJedang. With over 50 yearsa�� experience mastering this spicy sauce, they expertly balance red chilli, soy, malt and salt to get a perfect blend of sweetness and spice. Unlike ketchup or other common sauces, gochujang is low in fat and calories.
