orange, walnut & seaweed salad

salad | serves 2 | prep time 10 minutes | cook time 2 minutes for microwave rice, 40 minutes for brown rice on the hob

ingredients

  • 2 mandarin oranges
  • 2 handfuls walnuts
  • 4 sheets itsu crispy seaweed thins (any flavour! we used sea salt)
  • 2 tbsp sundried tomatoes
  • 250g wild rice/brown rice
  • 4 handfuls rocket
  • 3 tbsp lemon juice
  • 1 tsp salt
  • 2 tbsp olive oil
  • step 1

    add the brown rice to a pot and bring to the boil, cook for 45 minutes (if using microwave brown rice follow instructions on pack)

  • step 2

    combine the rocket, walnuts, orange, sundried tomatoes and rice on a plate

  • step 3

    drizzle the salad with lemon juice, olive oil and salt before sprinkling the crispy seaweed on top
