ingredients
- 2 tbsp coconut oil
- 1 aubergine
- 1 pouch o cooked brow rice
- 1 red pepper
- 1 tsp sesame oil
- 2 sachets miso'easy traditional
- 2 tbsp sugar
- 1 tbsp sake or mirin
- 1 tsp soy sauce or tamari
- small piece ginger
- small handful coriander
- small handful spring onion
- 1 tsp sesame seeds

Dice the red pepper and aubergine. Heat the oil, add the ginger and stir-fry the vegetables for 2 minutes.

Add the rest of the ingredients except the sesame oil and continue to stir-fry until the aubergine is soft.

Add sesame oil to season and mix in.
step 4
Serve the miso aubergine on a bed of rice. Sprinkle some coriander & sesame seeds on top to serve.
