miso aubergine

miso-easy | serves 2 | prep time 5 minutes | cook time 15 minutes

ingredients

  • 2 tbsp coconut oil
  • 1 aubergine
  • 1 pouch o cooked brow rice
  • 1 red pepper
  • 1 tsp sesame oil
  • 2 sachets miso'easy traditional
  • 2 tbsp sugar
  • 1 tbsp sake or mirin
  • 1 tsp soy sauce or tamari
  • small piece ginger
  • small handful coriander
  • small handful spring onion
  • 1 tsp sesame seeds
  • step 1

    Dice the red pepper and aubergine. Heat the oil, add the ginger and stir-fry the vegetables for 2 minutes.

    Add the rest of the ingredients except the sesame oil and continue to stir-fry until the aubergine is soft.

    Add sesame oil to season and mix in.

    Serve the miso aubergine on a bed of rice. Sprinkle some coriander & sesame seeds on top to serve.
