After opening the first itsu in 1997, we spent years trying every gyoza we could get our hands on. Some were good, some not so good. Eventually we realised, as the old cliche goes; if you want something done right, you better do it yourself. So, in 2010 we assembled a global gyoza team spread out from London to Korea, Vietnam & China. 100+ recipes later, we took delivery of our first bag of itsu vegetable fusion gyoza, and never looked back.
